藏香猪主要在四川省 阿坝、 甘孜;西藏的林芝、山南、昌都地区;云南省迪庆、甘肃的甘南和 岷县等地。大主产区在云南香格里拉。1983年有繁殖母猪6万多头。其主要特性为:体小.嘴筒长、直呈锥形.额面窄,额部皱纹少,耳小直立、或向前平伸,体躯较短,胸较狭,背腰平直或微弯,腹线较平,后躯较前驱高,臀部倾斜.四肢紧凑结实。蹄质坚实直立,鬃毛长而密.每头可产鬃93~250g,被毛黑色居多,部分初生仔猪有棕黄色纵行条纹。终年放牧生长缓慢,成年母猪体重4lkg,公猪体重36kg,头胎产仔4–5头,3胎以上6—7头。肥育期日增重为173g,48kg左右屠宰率为66.6%。膘厚3c/n,眼肌面积l6。8cm。瘦肉率为52.5%。藏香猪由于气候、地理环境及放牧饲养等因素具有独特的生物学价值.以其肉质细嫩、香味独特、营养丰富而著称,是地道的食品。
Tibetan Xiang Pigs are mainly located in Aba, Ganzi, Sichuan, Linzhi, Shannan, Changdu, Yunnan, Yunnan, Gansu, Gannan and Minxian in Tibet. The largest main producing area is in Shangri-La, Yunnan. The daily gain of fattening period was 173G, and the slaughter rate of 48kg was about 66.6%. The fat is 3c/n and the area of eye muscle is L6. 8cm. The lean meat rate was 52.5%. Because of its unique biological value, such as climate, geographical environment, grazing and feeding, Tibetan Xiang pig is famous for its delicate meat, unique fragrance and rich nutrition. It is a pure natural food.
“藏香猪”,又称“琵琶肉”。是纳西 摩梭人传统风味食品。也是普米、纳西等族食物。将宰好的猪去毛、骨、内脏后,腹腔内抹上盐、 花椒等调料,用细绳缝严,放在一个大木板上,上面盖块木板,再压上大石头,等水干后挂起来,形状好似琵琶,故称“ 琵琶猪”,其味道十分鲜美。清《滇南闻见录》有“丽江有琵琶猪,其色甚奇,煮而食之,颇似杭州之加香肉”的记载。猪膘肉色、香、味俱佳,是待客、馈赠的佳品。
